Scenario/Case Study
You are recent graduate with a Bachelor in Hospitality Management. It has always been your dream to open your own small catering business. You have decided to open

either a Sandwich Bar or Sushi Bar style fast food outlet. The outlet will have a small seating area with tables for up to 16 people to dine in and some outdoor

seating for 8 people. Most of the business will be takeaway. The site you are looking at is on Queen Street, near the Wellesley Street junction. The outlet is

currently vacant but it used to be a takeaway burger bar. In order to decide if this would be a viable business idea you need to do some research that will eventually

form part of your business plan. Choose either the Sandwich Bar or Sushi Bar concept and complete the following tasks.

Task One
Research and analyse the characteristics of this fast food concept so that you fully understand the distinct differences between this operation and other food and

beverage operations. You should evaluate and critique the following areas of the operation:
•    Product – produce a sample menu for food and beverages
•    Service style
•    Facility design and layout of customer area
•    Staffing
•    Technology
•    Marketing Environment and Target Market
•    Meal experience

Task Two

Using the information that you have analyzed with regards to your chosen operation you need to gather some financial information with regards to the initial set up

costs. You are required to put together an estimate for the equipment and furniture needed for serving your products based on the design and layout plan you have

already drawn. You must put this information into a spread sheet and produce a total cost budget. You will need to get prices for the following items:
•    Seating and tables for inside and outside the outlet
•    Display Fridge (or fridges) for food and beverages
•    Espresso Machine
•    Menu Board
•    Consumables per 1000 used – Cups, plates, napkins, boxes, bags etc
•    Refuse Bin

You should justify your choice for each item purchased and consider the following criteria when making your choice:
•    Restaurant concept and menu
•    Type of customers
•    Design, material and functionality
•    Cleaning and safe handling
•    Replacement and maintenance
•    Options available including the advantages and disadvantages of purchasing second hand equipment.

Task Three
Summarise your report and give recommendations as to whether, based on your research, it would be worth proceeding with a full business plan for your concept.

report using the APA referencing system.

•    Assignments must be word processed using one and half spacing and font size 12.

•    Use the same format (font and layout) throughout the whole assignment.

•    Number the pages of the assignment.

•    Ensure that there are no spelling mistakes (Use the spell check on the computer).

•    A good standard of English grammar is expected.
