Quality improvement tray line study guideline
Objectives:
• Develop understanding of production, preparation, and delivery times
• Analyze their contribution to effective food production, distribution and service
• Recommend and/ or implement corrective actions to prevent food production and/ or food distribution problems
Planned experiences:
• Check tray line and assist with service of trays
• Discuss with preceptor the meal service (breakfast, lunch or dinner) to conduct study
• Calculate the tray per minute assembled by the tray line staff for one meal evaluating problem areas
• Calculate the time from set up to delivery for three trays, recording temperature of each menu item at delivery
• Summarize findings and make recommendations accordingly
